THIS IS THE ACTUAL TOP HAT CHICKEN RECIPE, I worked with one of the founders
daughters and talked her out of the recipe.Prep your chicken the night
before 1/2 gal of water 1/4 cup salt submerge and allow to soak over night.
6 cups all purpose flour, 1/2 cup cayenne pepper ,1/2 cup red pepper 1/8 cup
salt add ice water until the consistency of pancake batter is reached..
Prepare deep fryer with Crisco solid vegetable shortening heat to 375
degrees. drop a small amount of batter into hot shortening and after it
floats taste some like it hot. some like it hotter add equal parts of
cayenne pepper and red pepper to increase the heat. Drain Chicken from salt
bath and pat dry, dip in batter and submerge in hot shortening. Breasts 14
min thighs 10 min legs 8 min wings 6 min., remove from shortening and allow
to drain in a colander or on paper towels.

And so it goes.

No I haven't, since I'm not much of a cook... my main agenda in putting it out is that hopefully it will go viral and someone I know will offer me a piece.

There's a place across from Buck Ice, I've heard has the same flavor as Top Hat. I have been eating Top Hat since the 70's. My father use to bring some with him on the weekends. Greasy brown bag with that scent. Wait a minute (snap back to the present). I will give that place a try and let you know of my findings. Stay tuned.............Jay

I have wanted this recipe for a long time. Thank you so much. I'm going to start soaking my chicken now. My grandparents started taking me there over forty years ago.
Thanks again.

I start eating it in the late 50's, 60's, 70's, 80's, 90's, etc. Best chicken I've ever eaten. That place in the north part of Columbus was awful. I'm going to try cooking it myself. If it turns out alright, I will post it.
